5 Things That Inspired Me This Week 8/14/15

How do the months fly by so quickly these days? I cannot believe it’s already mid-August. Stop!! Anyway, here are 5 things that inspired me to be happier and healthier this week. Obviously, I enjoyed experimenting in the kitchen!

 

Summer Veggie Rolls with Thai Almond Sauce

At the very top of my list this week: summer veggie rolls from Healthy Grocery Girl. Yum! An easy way to sneak in veggies and the sauce is AMAZING. Doesn’t take too long to prep and you can take all extra ingredients and conveniently throw them into a salad!

 

The ‘Orange Fluffy’ from Pink Pistachio

The result of a healthier homemade version of an Orange Julius made by a woman with three kids under the age of 5: an Orange Fluffy! I enjoyed half of it fresh and saved the other half for the following day. Surprisingly, day 2 was even better than day 1 — probably because I didn’t have to put in the work :) Perfect for a summer day. However, if you’re not a fan of pulp, you may want to strain it.

 

Rice Heating Pad

 

This rice pack has been my life savor this week (an odd favorite for the middle of August, right?!). I hurt my neck pretty bad one morning and putting the heated rice pack over my shoulders helped ease up the huge knot. I was also reminded (way too early I might add) of the joys of my husband working nights when the weather gets cold… freezing feet trying to fall asleep! Well this little microwavable heating pad helped there too.

 

Baked Cheesy Zucchini Rounds

Not necessarily the healthiest, but hey! There are still veggies in there. With zucchini left in the fridge, and low stock of other ingredients, I opted to try this recipe I pinned a while ago. I put some garlic powder on the zucchini then added some mozzarella cheese and baked it for 12 minutes. Now don’t you dare tell me you don’t like zucchini after trying this recipe!

 

Rearranging the Studio

Rearranging furniture has always been one of my favorite things to do! It is such an easy way to refresh a space without adding anything new. Randomly I decided the studio needed a makeover since the wall you see when you walk in was huge and bare. I love the way it turned out, plus it makes the room seem much bigger!
